Bottle-Gourd Paratha with Tomato Chutney

Ingredients

Serves : 8
  • paratha; 1 cup finely grated Bottle-Gourd


  • 2 cups wheat flour


  • 1/4 cup coriander leaves chopped


  • 1/2 cup chopped fenugreek leaves


  • 2 teaspoon Green chilli paste


  • 2 teaspoon oil


  • 1 teaspoon Garlic paste


  • 1 teaspoon caraway seeds


  • Salt as per taste


  • 1/4 cup Oil or ghee to roast parathas


  • Chutney;4-5 tomatoes chopped


  • 2 green chilles


  • 1 sprig of curry leaves


  • 1 teaspoon salt


  • 1 onion chopped


  • 1 teaspoon Red chilli powder


  • 1 teaspoon cumin powder


  • 1/4 teaspoon turmeric powder


  • 1 teaspoon curry powder


  • 2 tablespoons oil


  • 1 teaspoon Mustard seeds

Directions

  • Mix all ingredients mentioned for the paratha. Bottle gourd leaves out lot of liquid, Hence first mix everything well and only then add water little by little and knead a semi soft dough. Cover and set aside.
  • Heat oil in a pan, add mustard seeds and let it splutter. Add green chilles and garlic paste. Saute and add chopped onions.
  • After the onions have softened, add the masalas and seasonings. Add chopped tomatoes and saute. Cover and cook until tomatoes have softened and mixture looks homogeneous.
  • For making parathas take a big lemon sized ball and roll into a circle. Roast using ghee.
  • Serve immediately with chutney.
